As promised, I'm sharing our favorite Flatbread recipe with you all today! For this recipe, I partnered with Pomì USA and I'll show you - step by step - how to make a Grilled Chicken Flatbread, topped with our favorite Tomato Sauce, that both of my kids love!
If you are looking for an easy and quick recipe for your children's lunch (or dinner!), you've come to the right post! The kids and I love making this recipe at home, we use flatbread as snacks, substitute for pizza dough and even tortillas when we run out of ingredients to make them.
Our favorite topping is grilled chicken! You can try different toppings or just eat the flatbread by itself, we also like to dip the flatbread pieces into Italian tomato sauce (we use Pomì's tomato sauce to make ours), and sometimes we eat it with chicken salad too. It's always a great snack around here 🙂
Today I'll be sharing my own recipe for Grilled Chicken Flatbread, follow the instructions below:
Greek Yogurt Flatbread:
Ingredients:
- 1 cup plain Greek yogurt (I used zero fat)
- 1 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1 teaspoon dried basil
- 2 tsp baking powder
- 1 tbsp extra virgin olive oil
Preparation:
Preheat the oven to 375°.
This a one bowl recipe, where you combine together five ingredients (Greek yogurt, all-purpose flour, baking powder, salt and dried basil) until dough forms (do not use a stand mixer or food processor, as it makes the yogurt runny and hard to work with). Full ingredient amounts and instructions in the recipe card at the end of this post.
Start by measuring and adding 1 cup of unbleached all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon kosher salt plus 1 teaspoon of dried basil (these two last ingredients are optional) into a mixing bowl. And then whisk to combine.
To the dry ingredients, add 1 cup non-fat plain Greek yogurt. Stir until combined and forms a shaggy dough. The dough will be slightly sticky so use floured hands to knead it into an uniform dough ball.
Next, place the dough on a baking sheet to shape it into a flatbread (I used parchment paper), brush the dough with a little bit of olive oil. Using a rolling pin, roll the dough out and spread it across the baking sheet. It's a stick dough, but when you roll it out, the oil you brushed on top will work itself in and keep it from sticking. You can also sprinkle flour to dust the rolling pin, adding more as needed to roll the dough out thin.
I suggest baking your flatbread on the bottom rack of your preheated 375° for 15 to 18 minutes, depending on your oven. While flatbread is baking, you can start working on your toppings!
Toppings:
Ingredients:
- 2 thin chicken breasts
- 1/3 cup Pomì tomato sauce (I highly recommend using Pomì's sauce!)
- 1 1/2 cup shredded mozzarella cheese
- 2 teaspoons fresh basil
- 2 teaspoons green onion
- Salt and pepper to taste
- Optional: 1/2 cup fresh pear and cherry tomatoes
Preparation:
Start by seasoning your chicken breasts with salt and pepper (or your preferred seasoning), grill or sauté until done. Dice into pieces. Set aside.
Pull flatbread out of the oven. Brush Pomì tomato sauce on top, spread cheese evenly on top of sauce. Next add grilled chicken, fresh basil and green onions. Bring the flatbread back into the oven. Bake for 10 to 12 minutes or until cheese has melted.

Grilled Chicken Flatbread
INGREDIENTS

- 1 1/2 cup shredded mozzarella cheese
- 2 teaspoons fresh basil
- 2 teaspoons green onion
- Salt and pepper to taste
- Optional: 1/2 fresh yellow and cherry tomatoes
INSTRUCTIONS
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Set aside.
- In a large bowl, using a wooden spoon, combine together the yogurt, flour, baking powder and seasonings until uniform and a dough ball forms.
- Flour your hands and knead until the dough is smooth (I knead right in the bowl). Place the dough onto the center of a a baking sheet to shape it into a flatbread (I used parchment paper), brush the dough with a little bit of olive oil.
- Using your hands or a rolling pin, roll the dough out and spread it across the baking sheet. Evenly flatten the dough until the dough is ¼ inch thick (8x12 inch flatbread).
- Bake for 15-18 minutes until the flatbread is golden-brown and cooked through.
- While flatbread is baking, season your chicken breasts with salt and pepper (or your preferred seasoning), grill or sauté until done. Dice into pieces. Set aside.
- Pull flatbread out of the oven. Decrease the oven to 325 degrees F. Brush Pomi tomato sauce on top, spread cheese evenly on top of sauce. Next add grilled chicken, fresh basil, green onions and tomatoes. Bring the flatbread back into the oven. Bake for 10 to 12 minutes or until the ingredients are softened and heated through.
